Whew! What whirlwind few weeks... it's time to go back to the Keto diet for me.
Let's be honest, a carb-y breakfast (think pancakes, waffles, bagels) is one of life's greatest pleasures. But if you're following a Keto diet, you have to rethink these staples, and focus on low-carb, high-fat options.
Luckily, there are still tons of healthy and delicious keto friendly breakfast recipes to fit that bill (including keto versions of those bread-heavy favorites).

Basically, the keto diet is not a free ride on the all-bacon-everything train.
I have found some keto diet friendly breakfast recipes—which have bacon, yes, but also lots of other things—will help you strike for healthy yet yummy meals.
Today I will give you my favorite breakfast pancakes.
Keto Pancakes
Shoutout to almond flour for letting me have pancakes on the keto diet.
Per serving: 268 calories, 23 g fat, 6 g carbs, 3 g fiber, 9 g protein
1 cup Blanched almond flour(blanched & finely ground recommended)
1/4 cup Coconut flour
2-3 tbsp Erythritol(or any sweetener of choice)
1 tsp Gluten-free vaking powder
5 large Egg
1/3 cup Unsweetened almond milk (or any milk of choice; may need more - see instructions)
1/4 cup Avocado oil (or any neutral tasting oil that is liquid at room temperature)
1 1/2 tsp Vanilla extract (optional, but recommended)
1/4 tsp Sea salt (optional, but recommended)
These paleo pancakes with almond flour and coconut flour just might be the best keto low carb pancakes version ever. They’re super fluffy and slightly sweet, and they’re the closest to real pancakes that I’ve ever tried.
I definitely like these better than pancakes made with just one type of low carb flour! And, they are wonderful. Also, easy to store extra pancakes in freezer for a great snack or quick breakfast.

Now, you have an important decision left to make – what to top the keto pancakes with? Butter, nuts, berries, whipped cream?

It goes without saying I’ll want some sugar-free maple syrup, sometimes on mine.
