Yesterday started out an ordinary Monday. No big plans for me but the usual breakfast, dishes and straighten up the house or thoughts of laundering of the bedding.
However to my rescue was an unexpected phone call from a friend asking about a lunch break. Well anyone that knows me... knows, it doesn't take much persuasion for me to walk away from housework. 😅
My husband and I loved food. We loved finding new food genres that we hadn’t tried and recipes that we had never cooked before.
Over the years our marriage was filled with travel & foodie adventures at restaurants, trying new foods and different cuisines as well as new variants of familiar foods.
Since he has passed it is up to just me to carry on our tradition and obsessions.
So, yes I was anxious to showcase and share our newest Eatery in Bolivar, "Flat Creek."
My favorite meal there... Three Broasted Pork Chops, Green Beans And Creamy Mashed Potatoes Smothered With Gravy And Their Own Butter 🥐. Yum!
I thought my "Monday" could not have gotten better until later in the evening my stomach screamed at me again.
I noticed I had a lonely zucchini in the refrigerator that needed to be eaten before I lost it to spoilage. So I whipped up my favorite fried Zucchini and sat down with a cold one (I know I shouldn't be drinking beer but it was there in refrigerator too... and it's only one 😂) With a couple of Redbox movies, I was in "Heaven" for the rest of the evening!
My little tip: Zucchini should always be salted before frying. This is because salting zucchini before frying helps to draw out some of the moisture which creates a crispier texture. It also helps to season the vegetable and enhance its flavor.
Herbs and Spices: garlic(my favorite), basil, oregano, parsley, pepper, salt, thyme, cinnamon, ginger all go well with Zucchini.
Also, Zucchini is rich in vitamin B6. Research suggests that this vitamin can help with regulating blood glucose. The vitamin may even play a protective role against diabetes. Compounds such as lutein and zeaxanthin protect the eye's cells by filtering blue light wavelengths.
Yes, fried foods are my weekness but... Oh Boy... It was a great day!
