The other day we were eating at at the local Golden Corral Buffet. As usual I ended the meal with the Carrot Cake.
I'm always reminisce about my mother's version. My mother's cake would put Golden Corral's to shame. Mom just made the best Carrot Cake!
Here is her recipe!!!
Wet Ingredients:
1/2 cup white sugar
1/2 cup brown sugar
1/8 cup molasses
1/3 cup coconut oil
2/3 cup avocado or vegetable oil
3 large eggs
1 teaspoon. vanilla
Dry Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoon cinnamon
1/2 teaspoon salt
Carrots
3 1/2 cups grated carrots
Directions:
1. Preheat oven to 350°F.
2. Mix the sugars, eggs and oil together.
3. Sift the dry ingredients together and add to the wet ingredients.
4. Mix the carrots into the batter and spoon into 13-inch by 9-inch rectangular or round pans.
5. Bake for 35 minutes or until a toothpick comes out clean.
6. Cool before icing.
Icing Ingredients:
4 ounces softened cream cheese
2 tablespoon softened, salted butter
1 1/2 cups confectioner's sugar
1/2 teaspoon. vanilla
Directions: 1. Sift sugar into softened cream cheese and butter, and combine. 2. Add vanilla. 3. Spread on cooled cake
