11/26/2024 My Cold Snap Kato Eats...

I'm not sure if I'm ready for this cold snap but I will have ready a big pot of my favorite Keto Cold Snap Soup.

My Smoked Sausage and Cabbage Soup is hearty, comforting, low carb, and loaded with rich and savory flavors. It is the perfect soup to make on a cold day where you want to warm up from the inside out. (Yes it looks like we are already experiencing those cold temperatures)

Smoked sausage, riced cauliflower, tomatoes, cabbage, and a handful of spices come together for one excellent cabbage soup recipe. 

This soup reminds me a little of Cabbage Roll Soup minus the rice. I used diced callflower instead and also used smoked sausage instead of beef. You won’t even miss the rice, I promise!

This Sausage and Cabbage Soup makes a HUGE pot so you’ll have lots of leftovers unless you are feeding a large group of people.

I usually warmed up a bowl in the microwave the next day, and it still tasted delicious. You might even say the flavors blended even more, so you had more dimensions of flavor in each bite. 


Ingredients

1 lb mild smoked sausage or any sausage

1 onion, chopped

2 cloves garlic, minced

7 cups cabbage, chopped

1 12 oz. package Frozen Cauliflower Riced

2 28oz cans diced tomatoes + 3 cups water & chicken bouillon cubes

A dash of Cajun Seasoning

1/2 tsp salt

1/4 tsp pepper

Two artificial sugar packets (helps with the acidic tomatoes)


Instructions

In large pot, stir together all ingredients. Bring to a boil.

Cover and reduce heat to medium-low and simmer for 30 minutes to 1 hour.


Great for cold days!
